Kimberly's Spritz Cookies
Preheat oven to 350 degrees.
Almonds: should be ground extra fine until almost "dust". You will need a good hand held nut chopper -- not the one that sits on top of the jar. If almonds are not ground fine enough - the recipe will turn out entirely different in taste and looks.
Stir in flour and almonds, blend well (cut in is best).
Cream butter and sugar until light and fluffy. Add egg and flavoring and beat well.
Fold in finely ground almonds and flour -- a little at a time.
Put through cookie press. Bake on ungreased cookie sheet for 10-15 minutes until lightly golden brown.
To have colored cookies, set aside a portion of the dough and add food coloring - a drop at a time. Fold in until you reach the color you like. Put through press and bake as noted.
