Baked Yogurt Chicken
Ingredients
- 1/2 cup plain non-fat yogurt
- 1 T Dijon mustard
- 1/2 t salt
- freshly ground black pepper to taste
- 1 cup dried bread crumbs
- 1/4 cup parmesan cheese, freshly grated
- 1 T sesame seeds
- 1/4 t dried rosemary, crumbled
- 1/4 t dried basil, crumbled
- 1/4 t paprika
- 1/4 c chopped parsley
- 1 chicken (3-4 pounds) cut into pieces
Preheat oven to 350 degrees.
In a pie plate, mix yogurt, mustard, salt, and pepper. On a piece of waxed paper, combine remaining ingredients except chicken.
Roll the chicken pieces first in yogurt mixture, then in crumb mixture. Place chicken in a lightly oiled 9 x 13 baking dish and bake until coating is lightly browned and chicken juices run clear when pieces are pricked, about 1 hour.
