Quick and Easy Chili

Ingredients

  • 1 pound ground beef - browned and drained
  • 1 can tomatoes, diced w/juice
  • 1 can beef broth
  • 1 can tomato soup
  • 1 can pinto beans - drained and rinsed
  • 1 can kidney beans - drained and rinsed
  • 4 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • 1 medium bay leaf
  • 1/4 teaspoon ginger
  • 1 can (4 oz) diced green chilis - optional

Brown ground beef and drain well. Drain pinto and kidney beans and rinse very well. Add all other ingredients and stir well. Bring to a simmering boil, turn down heat and let simmer for 1-3 hours, stirring occassionaly.

Serve with corn bread or over a bowl of rice.

Notes: You can substitute 1 diced onion for the onion powder. Add more or less spices to taste. (The ginger helps to cut the flatulent effect of the beans.)
