Ground Meat Casserole

Ingredients

  • 3/4-1 lb. ground turkey or beef
  • 1 large potato, peeled and sliced 1/8-1/4 in. thick
  • 1 large carrot, peeled and sliced
  • 1 med. onion, diced
  • 3 cloves garlic, diced
  • 1 can (14 1/2 oz) tomato tidbits
  • 1 can (14 1/2 oz) beef broth
  • 6 oz. uncooked med. grain rice
  • 1 tsp. oregano
  • 1/2 tsp. paprika
  • 2 good dashes Worcestershire Sauce

Layer bottom of lightly greased 2 qt. casserole with potato slices and carrots. Brown ground meat, add in onion and garlic (mushrooms) and cook for 2-3 min. Add in uncooked rice and cook until rice is "clear". Mix in broth, tomatoes (green chilies/corn) and spices. Cook and stir until it begins to bubble and sauce starts to thicken. Pour mixture over potatoes and carrots in casserole.

Cover, bake at 350 degrees for 45 min. (should be nicely bubbling and rice should almost be done). Uncover and bake an additional 15 min. Let stand for 5 min. before serving.

Optional Ingredients
use any or all

  • 4 med. mushrooms, sliced
  • 1/2 C. frozen corn
  • 1 can (4 oz) diced green chilies
  • substitute 1/2 C red wine for 1/2 C beef broth
