Meatloaf

Ingredients

  • 6 med. mushrooms, chopped
  • 1 med. onion, diced
  • 3 cloves garlic, chopped
  • 1 egg, beaten
  • 1 lb. ground turkey (or grnd beef, or combo grnd turkey/pork or grnd turkey/beef)
  • 1 sm. can evaporated milk (or 5 oz. milk)
  • 1 tsp. oregano
  • 1/2 tsp. paprika
  • 1/2 - 1 tsp pepper
  • 4 slices bacon, fried crisp and crumbled into pieces (or substitute 1/4 C. bacon bits)
  • 1/2 cup corn flake crumbs
  • 8 oz. shredded cheese (mozzarella, or a blend of cheeses, I even like the goat cheese blend from TJ's.)
  • 2 good healthy dashes Worcestershire sauce

Preheat oven to 350 degrees.

In a non-stick skillet, lightly sauté the mushrooms, garlic and onion. Set aside to cool while you mix the rest of the ingredients.

In large bowl blend together egg, meat, milk, spices, add in sautéed items, bacon bits, corn flake crumbs, Worcestershire sauce and all but a small handful of the cheese. Once well blended, shape and place in rectangle baking dish (mine is 13 x 9). Cover with foil and bake for 50 min. Remove foil, sprinkle remaining cheese on top and finish baking for approx. 10 min. Let set for 5 min. before serving.
