Chicken Paprikash from Kimberly's Recipe Box

Ingredients

  • 1 med. green pepper, cut into bite sized pieces
  • 1 med. onion, diced
  • 3 garlic cloves, diced
  • 4 med. mushrooms, chopped
  • 2 boneless, skinless chicken breasts
  • 1/4 C white wine or chicken broth
  • 1 Tbsp. tomato paste
  • 1 rounded Tbsp Hungarian paprika
  • 1/2 tsp. pepper
  • 1/3 C. sour cream
  • 4 oz. noodles

In a large non-stick skillet, saute green pepper, onion, garlic and mushrooms. Move to side of skillet, add chicken breasts and brown. Move breasts to center of skillet and surround with vegys. Mix tomato paste with wine/broth. Sprinkle paprika and pepper over chicken and vegys. Add broth and paste mixture. Cover and cook on low for 45-60 minutes, until chicken is done.

Just before chicken is done, cook noodles per package directions. Remove chicken, and fold sour cream into vegy sauce mixture. Heat, do not boil.

Serve over noodles.
