New Potatoes and Peas in Light Cream Sauce

Ingredients

  • 1 1/2 lbs very small new potatoes, about 15
  • 1 to 1 1/2 C fresh new peas

Wash potatoes well. Cook in boiling water until almost fork tender. Add peas and continue cooking until potatoes and peas are done. Drain.

In separate pan, make sauce. Combine with potatoes and peas. Sprinkle with paprika and serve.

Cream Sauce

  • 3 tablespoon butter
  • 4 tablespoon flour
  • 1 cup milk

Melt butter; add flour and blend. Add milk and cook over low heat until thick, stirring constantly. For a rich sauce use cream.

Serve with Oven Baked Chicken for a delicious meal!
