Grandmother Wiseman's Tomato Soup
(updated for city dwellers)

Ingredients

  • 1 tablespoon butter
  • dash cayene pepper
  • 1 tablespoon flour
  • 1 - 28 oz. can diced tomatoes in puree sauce
  • 1/2 cup thick sour cream
  • parsley to taste

In large saucepan, melt together the butter, cayene pepper and flour. Stir until flour mixture has developed a nice golden brown color, being careful not to burn it.

Add tomatoes and stir together. Simmer, stirring occasionally until soup bubbles and is hot. Do not boil.

Add sour cream and fold into soup until melted and well blended. Sprinkle in the parsley. Ladle into soup bowls and serve.
